Fjord can't help a low-huffed 'oh fuck-!' as the stomach-lurch of the initial launch into open air happens, but otherwise he's just going to hunker down as close to Caleb's back as he can manage, and hold on for dear life.
It won't stop him looking though, using the eagle-eye perspective to get a basic overview of the place. Definitely more useful than squinting at a map for getting a sense of a place. And honestly, the rush of air and new smells is a bit overwhelming to what he's coming to realize must be the shift of senses that came along with the ears and tail.
